Instructions

  1. Preheat oven to 375 degrees
  2. Wash acorn squash thoroughly.
  3. Cut in half vertically, from the stem down.
  4. Scoop out seeds and fibers.
  5. Retain seeds for roasting.
  6. Line a high-sided baking pan with parchment paper.
  7. Lay the squash halves on the parchment paper.
  8. Pour water into the cavity to fill it about 3/4 of the way.
  9. Sprinkle salt over each squash half.
  10. Roast in oven for about an hour, checking for doneness after about 40 minutes.
  11. Meanwhile, prepare your filling.
  12. When squash is done, put squash halves on a serving platter.
  13. Fill each squash half with your chosen filling.
  14. Serve with side dishes of you
