Ingredients

1 head garlic, roasted* (or 2–3 tablespoons roasted garlic paste)
½ cup (1 stick) unsalted butter
2 tablespoons fresh oregano leaves (or 2 teaspoons dried)
1 tablespoon fresh parsley, chopped
1 tablespoon fresh basil, chopped (or 1 teaspoon dried)
1 teaspoon lemon zest
1 tablespoon lemon juice
¼ teaspoon red pepper flakes (optional)
¼ teaspoon salt
¼ teaspoon black pepper

Instructions

Melt butter in a small saucepan over medium-low heat
Squeeze roasted garlic cloves into the butter and mash with a fork
Add herbs, lemon zest, salt, pepper, and red pepper flakes if using
Cook 1-2 minutes to infuse flavors
Remove from heat and stir in lemon juice
Let stand 5 minutes before serving
