When you have a rainbow of radishes growing in your garden, mix them together and punch them up with a vinegar dressing, in this Rainbow Shaved Radish Salad.

1 cup shallots, finely sliced and rinsed
1/4 cup extra virgin olive oil
3 tablespoons lemon juice (more to taste)
2 tablespoons rice wine vinegar
1 tablespoon honey
6 cups washed and trimmed radishes, sliced with a mandolin on its thinnest setting
2 cups of other root vegetables, sliced thin (beets, carrots, fennel)
Sea salt and freshly ground black pepper to taste
2 tablespoons freshly chopped basil
Instructions
In a bowl, toss together the dressing ingredients: shallots, olive oil, lemon juice, rice wine vinegar, and honey.
Add radishes and other root vegetables and mix.
Sprinkle generously with salt, pepper, and freshly chopped basil, and enjoy!
