4 large potatoes, washed and cut into bite-sized pieces
2 tablespoons olive oil
2 teaspoons dried oregano
4 cloves garlic, minced
Salt and pepper to taste
Instructions
Preheat your oven to 425 degrees F.
In a large mixing bowl, combine the potato pieces, olive oil, dried oregano, minced garlic, salt, and pepper. Toss until the potatoes are evenly coated.
Spread the seasoned potatoes on a baking sheet in a single layer.
Roast in the preheated oven for about 35 minutes, or until the potatoes are golden brown and crispy, turning them once or twice during the cooking time for even browning.
Remove from the oven, let them cool for a minute, and serve as a delicious side dish.
