Preparation: Wash and slice the potatoes using a mandoline or a sharp knife. Aim for thin, uniform slices for that perfect crunch.
Soak: Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch, resulting in crispier chips.
Dry: Pat the potato slices thoroughly dry with paper towels to ensure they crisp up during frying.
Fry: Heat vegetable oil in a deep fryer or large, heavy pot to 350°F (175°C). Carefully add the potato slices in small batches, ensuring not to overcrowd the oil. Fry until golden brown and crispy, usually 3-4 minutes per batch.
