  1. Prepare the Chilies and Garlic: Slice the chilies into halves and remove the stems. If you prefer a milder sauce, remove the seeds. Peel the garlic cloves and roughly chop them.
  2. Simmer the Mixture: In a medium saucepan, combine the chilies, garlic, vinegar, and water. Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for about 10-15 minutes, until the chilies and garlic are soft.
  3. Blend the Sauce: Carefully transfer the mixture to a blender or food processor. Blend until smooth, adjusting with more water if needed to reach your desired consistency.
  4. Season and Strain: Add salt and sugar (if using) to the sauce and blend again briefly. For a smoother hot sauce, pour the mixture through a fine-mesh sieve into a clean jar or bottle, discarding any solids.
  5. Bottle and Store: Let the hot sauce cool completely before transferring it to a bottle. Store in the refrigerator, where it will keep for up to 2 weeks.
