A scorching hot habanero sauce that blends the intense heat of 8-10 habanero peppers with the sweetness of honey and the savory notes of shallots and garlic, all balanced by the tang of apple cider vinegar and a pinch of salt.

Instructions

  1. Wear gloves when handling habanero peppers to avoid irritation.
  2. Remove stems from peppers and chop them coarsely.
  3. In a saucepan, combine habaneros, shallots, garlic, vinegar, honey, and salt.
  4. Simmer over medium heat for 20-25 minutes until peppers are tender.
  5. Carefully transfer mixture to a blender and puree until smooth.
  6. Strain through a fine sieve to remove seeds and pulp.
  7. Let the sauce cool before bottling. Use sparingly in dishes like chili, stir-fries, or even as a dipping sauce for wings.
