1 cup fresh parsley leaves, packed
¼ cup fresh oregano leaves (or 1 tablespoon dried)
3–4 garlic cloves
1 small shallot, roughly chopped
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
½ teaspoon red pepper flakes (adjust to taste)
½ teaspoon salt
¼ teaspoon black pepper
½ cup extra virgin olive oil
Instructions
Pulse herbs, garlic, and shallot in a food processor until finely chopped but not pureed
Transfer to a bowl and stir in remaining ingredients
Let sit for at least 15 minutes before serving to allow flavors to blend
