Does any other fruit scream “summer” more than peach? This homemade peach cobbler recipe is especially enticing because it’s made in the slow cooker, which means you don’t have to worry about heating up the house in 90 degree heat. All you have to worry about is having snacks on hand to curb your hunger after smelling the delicious aroma of peaches and apple butter cooking all day!

  1. For the peach filling: Spray the insert of a 6-quart slow cooker with cooking spray.
  2. Place the peaches, apple butter, bourbon, sugar, and salt in the slow cooker. Stir to coat the peaches fully, then spread them out evenly.
  3. For the cobbler: In a large bowl, mix the flour, yellow cornmeal, sugar, baking powder, and salt. Whisk in the milk. Whisk in the melted butter until smooth. Pour the batter over the peaches, making sure it coats the entire surface.
  4. Place a long piece of paper towel over the slow cooker and cover with the lid. Pull the paper towel tight so it doesn’t sag. Cook on Low for 7 to 9 hours or on High for 4 to 6 hours, until a toothpick inserted into the center comes out clean. Once the middle of the top has puffed up and is golden around the edges, the peach cobbler is ready to serve.
  5. Serve warm, garnished with extra peach slices.
