1 cup sugar
1/2 cup vegetable shortening
2 large eggs
2 cups all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/2 cups applesauce
1 apple, peeled, cored, and diced
1/2 cup pecans
1 teaspoon vanilla bean paste or vanilla extract
Caramel sauce for drizzling
Instructions
Preheat the oven to 350 degrees F. Grease a 9 x 13-inch baking dish.
Using a hand mixer or a stand mixer fitted with the paddle attachment, beat the sugar and shortening on low speed until fluffy. Add the eggs, one at a time, beating until incorporated. Add the flour, cinnamon, cardamom, baking soda, and salt. Beat until well combined. Fold in the applesauce, apple, pecans, and vanilla.
Pour the batter into the baking dish and bake for 30 to 35 minutes or until the cake is golden and a toothpick inserted in the center comes out clean.
Let the cake cool in the pan, then slice and serve with a drizzle of caramel sauce.
