Head of cauliflower
Small head of broccoli
1 Cucumber
1 Yellow pepper
1/2 pint Cherry tomatoes
1/2 cup Light Italian dressing (adjust as desired)
1 cup shredded Sharp Cheddar cheese
1 cup chopped Pepperoni
Paprika
Instructions
Cut cauliflower into bite-sized chunks
Steam for 2 minutes
Allow to fully cool
Cut the cucumbers, broccoli, tomatoes, and yellow peppers into bite-sized pieces
Add the sharp cheddar cheese and pepperoni
Toss all of the ingredients in light Italian dressing
