When you grow a pepper this good, you don’t need to overcomplicate things. This is our go-to recipe—comforting, flexible, and deeply satisfying.

Instructions

  1. Preheat oven to 375°F.
  2. Slice the tops off the peppers and remove seeds and membranes. Set upright in a lightly oiled baking dish.
  3. In a skillet, sauté onion in olive oil until soft. Add garlic and cook briefly.
  4. Add ground meat and cook until browned. Stir in tomatoes, rice, herbs, salt, and pepper.
  5. Spoon the filling generously into each pepper.
  6. Cover loosely with foil and bake for 30 minutes.
  7. Remove foil, sprinkle with cheese, and bake uncovered another 10–15 minutes, until peppers are tender and cheese is bubbly.
